Bardstown Origin Series: High Wheat Whiskey
The newest addition to Bardstown's estate-distilled Origin Series, and arguably the most technically interesting. A 39% wheat mash bill — nearly double their earlier wheated expression — entered into the barrel at just 108 proof, well below the industry norm. That low entry proof pulls more wood sugars from the oak early, building a sweetness and texture that the higher-proof wheaters simply can't replicate. Six years of maturation, bottled at 106 proof. The result is richer and spicier than you'd expect from a wheated bourbon: caramel, stone fruit, and toffee up front, then a surprisingly assertive black pepper finish that gives it real presence. Creamy mouthfeel, generous flavour, and a distillery that clearly knew exactly what they were doing.
