WhistlePig Piggyback 6yr Rye
The last project Dave Pickerell worked on — and it shows. Pickerell's stated ambition was to build the best aged rye whiskey for a cocktail: 100% rye for full spice expression, six years in new charred oak for genuine complexity, and bottled at a very deliberate 96.56 proof — a number WhistlePig describes as the optimal point in the strength-sweet-bitter triangle for mixing. The bottle itself was redesigned with bartenders in mind: ergonomic, balanced, built for the speed of service. The pig on the label wears Pickerell's Stetson.
What's inside lives up to the brief. Cinnamon, black peppercorn, and citrus zest on the nose. Powerfully spiced on the palate — cocoa, cardamom, cured leather — with a long, warm finish that layers baking spice over vanilla and a lingering hit of rye heat. It holds its own neat, but it's in a Sazerac or Manhattan where it really earns its place: the spice cuts through vermouth and bitters with the kind of clarity that makes a good cocktail great. A bottle that belongs behind every serious bar.
