Built inside a former oyster hatchery on the edge of the Tasman Sea, Waubs Harbour is one of the most genuinely maritime distilleries in the world. Founded by the Polmear family and led by Head Distiller Rob Polmear — formerly of Lark and Overeem — every cask matures metres from the ocean, taking on the salt-laden character of Tasmania's wild east coast.
